I started by just making cakes for friends – as thank you presents etc. Creating something delicious and personal, as a gift for someone, is usually perceived as more special than just ‘going shopping’. Obviously I was delighted to have been asked, but I didn’t really know what I was doing, and it was very much trial and error at this point. Fortunately, the trial and error process is something I enjoy. I like being given a challenge, and working out how I’m going to do something.

I also love the detail, precision, and patience required. I love the finishing touches and finding that personal element that will make each cake just that extra bit special. I have a lot of fun putting the cakes, and the different components, together, usually starting off with a basic concept, or a couple of requirements from the client, and the idea growing into something quite exciting.

I also love the meticulousness of the details and finishing touches, and finding what personal ingredient will make that cake unique and exclusive to that person. I get a lot of pleasure from putting each cake together, beginning from the basic theme and/or specific requests from the client, and allowing the cake to blossom into the finished article.

It’s a fantastic feeling to be able to create a product that tastes delightful, and that people love to eat. However, my main drive comes from the responses the cake receives when the client first sees it: right from the beginning, this absolutely became the best part of the process for me. The range of pleasure, astonishment, amusement, delight and surprise caused, is just amazing, and as a result, I have determined to rearrange my schedule whenever possible, in order to be present myself, when each cake is collected or delivered. The ‘reveal’ is just a lovely moment, and I want to be there to enjoy it too.
